L’Honneur de la Ligne : Une Pêche Durable, du Fond des Mers jusqu’à l’Assiette

Line-Caught: Sustainable Fishing from the Deep Sea to Your Plate

In 2026, sustainability is no longer an option, it's a requirement. For our fish shop, this begins with a radical choice: line fishing (Lína). Unlike bottom trawling, which scrapes the seabed and disturbs fragile ecosystems, our Icelandic fishermen use selective methods.

Why does line fishing change everything? First, for the ocean: the hook only touches the fish, leaving marine flora intact. Then, for quality: a line-caught fish does not suffer the stress or crushing of a net. The flesh remains firm, intact, and of absolute purity.

Zero Waste: The 100% Philosophy

But our commitment doesn't stop when the fish leaves the water. In Iceland, we respect every creature by using the entirety of the fish. Nothing is thrown away, everything is valued:

  • The Liver: Nothing is lost. It is processed into high-quality cod liver oil, a natural and powerful source of Omega-3.

  • The Cheeks and Tongue: Considered treasures by gourmets, they are delicately removed for their tender and unique texture.

  • The Bones: Rich in minerals, they are transformed into essential nutrients for animal feed.

  • The Head: Once the cheeks are removed, the head is dried using ancestral methods. These dried heads are prized by chefs for creating broths and sauces of unparalleled depth of flavor.

Consuming our fish means choosing total transparency. It means supporting a circular economy where respect for nature translates into gastronomic excellence.
